Ingredients

  • 500 g (1 lb) dried macaroni
  • 80 ml (1/3 cup) salted butter
  • 60 ml (1/4 cup) all purpose flour
  • 875 ml (3 1/2 cups) Nutrilait 3.25% milk
  • 1 bay leaf
  • 240 g (2 cups) Saputo Triple Cheddar shredded cheese
  • Small pinch ground nutmeg
  • 2.5 ml (1/2 tsp) dry mustard
  • Salt and freshly ground pepper, to taste
  • 1/4 teaspoon smoked paprika plus more for sprinkling on top

Directions

  1. Cook the macaroni according to the manufacturer’s instructions.
  2. Melt the butter in a saucepan over medium heat.
  3. Add the flour and whisk to blend.
  4. Cook, while whisking, for 1 minute.
  5. Whisk in the milk until smooth.
  6. Add the bay leaf, and nutmeg.
  7. When it comes to a boil, turn the heat down to low.
  8. Remove from heat, and discard bay leaf.
  9. Add Saputo Triple Cheddar cheese, dry mustard and 1/4 teaspoon paprika and stir until cheese has melted.
  10. Season to taste.
